Olives, Madrid style
(Olives, Madrid-style - Traditional recipe from Spain)

Time: preparation: 20 minutes

serves 4

1/2 kg (1,1 lb) green or black olives
150 g (5 1/2 oz) fresh young onions, finely
    sliced
Paprika
Powdered oregano
Chopped garlic
Extra virgin olive oil
Vinegar
Salt

Easy recipe

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

Wash the olives in cold water and pat dry with absorbent kitchen paper accurately. Put them in a bowl and add the onions and garlic. Sprinkle with the oregano and paprika. Dress with the olive oil and vinegar in the quantity you prefer. Stir accurately and season to taste with salt. Stir again and let the mixture rest in a cool place before serving (for at least 1 hour).

Note
- It's a tasty appetizer.
- It's a do-ahead dish.
- Who doesn 't like garlic can substitute it with some tablespoons dried or fresh chives.
