italian meatloaf
(Tasty meatloaf - Our recipe)

serves 6

675 g (1 1/2 lb) minced (round) veal
2 eggs
Little bunch of fresh parsley
1 fresh young onion
2 tablespoons soy sauce
3 ripe but firm tomatoes
1 200 g (7 oz) can peas
Dry breadcrumbs
12 tablespoons extra virgin olive oil
1 glass (8 fl oz - 1 C) white wine
Salt

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

Clean and wash the onion and parsley and chop them finely. Peel the tomatoes, after boiling them for one minute, remove all the seeds and chop. Drain well the peas. Put the meat, eggs, chopped parsley and onion, soy sauce, chopped tomatoes, peas, salt and a little dry breadcrumbs in a large bowl. Begin to mix all the ingredients with your hands (be careful not to crush peas); meanwhile add other dry breadcrumbs very slowly. It's difficult to say how much dry breadcrumbs you have to add; the dough must be neither hard nor too soft. When you have reached the right consistency, control the salt and combine the mixture in your hands shaping into a dumpy sausage. Don't make it too big! It's better to make more than one "polpettone" (meatloaf). So you can turn them easily in the pan. Roll your meatloaf in dry breadcrumbs.
Pour the olive oil into a large saucepan and arrange the meatloaf. Fry lightly it over a medium heat in order to brown on all sides. Pour over the wine and let it evaporate. Add 250 ml (8 fl oz - 1 C) hot water and keep on cooking, half-covered, turning it over now and then, for about half an hour or until cooking juice is well retired. Allow your meatloaf cool in the pan and then slice it up. Arrange the slices on a serving platter and serve.

Note
- You can prepare meatloaf in advance. It's the ideal dish for a cold lunch or dinner, a
  picnic or a breakfast.
- You can garnish every slice with mayonnaise, olives and pieces of peppers in oil ...
- The ideal side dish is a potato salad or a green salad or a tomato salad.
