"Fragola" grapes (red grapes) |
|
Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)
Choose ripe but firm grapes. Wash them and remove the berries from the stalk.
Put them in a saucepan; bring to the boil and, after lowering the flame, cook them, half-covered, for about 20 minutes, stirring now and then.
Then mash the berries with a wooden spoon and keep on cooking for about 5 minutes.
Pass the mixture through a moulilegumes or mash, then sieve to remove their seeds.
Weigh the mixture and add 100 g (3 1/2 oz)sugar every 500 g (18 oz) mixture.
The real quantity of sugar depends on the sweetness of the chosen grapes.
Bring to the boil again; lower the flame and keep on cooking, stirring now and then, for 10-15 minutes.
Let the jam cool, pour into the glass jars and sterilize them for an hour.
Note
· It's very good for making jam tart or apple tart.
· The same recipe can be used for realizing other grapes jams but you must remember that the quantity of sugar must be varied
(increased) according to the kind of the chosen grapes.
