  • 1 kg (2 1/4 lb) cherries
  • 200 g (7 oz) sugar
  • 10 cloves

This recipe needs seedless cherries.
Remove the stalks from the cherries, wash them in cold water quickly and drain. Put them in a saucepan with the sugar and cloves; cover. Bring to the boil slowly; this kind of fruit makes water when cooked. Be careful: when you see water, raise the flame, stir gently and keep on cooking for very few minutes. If the water is too much, remove it with a ladle. If the cooking time is too long, you risk to make jam instead of cooked fruit. At the end there must be a little juice. Chill the dessert.
They are very good as a dessert but you can also garnish ice creams with them. In this case the recipe serves 12.
