Plum cake or sherbets |

Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)
Prepare the pastry cream
following our instructions.
Clean strawberries, wash under running water quickly, pat dry with absorbent kitchen paper and plunge them in white wine for few minutes. Then slice them and put apart.
Prepare your dessert. You can use plum cakes or sherbets (sponge biscuits). Half biscuits lengthways or slice plum cakes crossways.
Arrange slices on the bottom of the deep dish in which you want to prepare the cake. Water down 4 tablespoons Marsala (Sicilian
fortified wine) and soak the plum cake or sherbet slices with it. Cover with pastry cream and prepare another layer with the plum cakes or
sherbets. Soak this layer too and cover with pastry cream. At this point sweeten the strawberries with icing sugar and arrange them on
the surface of your dessert according to your fancy.
Chill for at least 1 hour before serving.
This is a do-ahead cake.
