Prepare a batter with flour, eggs, ground cinnamon, sugar, lemon zest, about 500 ml (16 fl oz - 2 C) of water and yeast. Use a whisk to avoid lumps. Allow it to rest for about 1 hour.
Then peel and slice the apples. Add them to the mixture and stir.
Heat a good quantity of oil in a frying pan and deep fry spoonfuls of the mixture over a high flame until light golden brown.
Remove the fritters with a slotted spoon, put them on kitchen paper to remove the excess of fat and dust with icing sugar.
Serve warm or cold.

Note

  • - It's very difficult to have the real amount of the frying oil and icing sugar.
So nutrition facts don't include these ingredients. If you want to include these ingredients, you have to add 100-150 kcal per 100 g of this dish.
