italian cakes with apples
(Apple fritters - Our recipe)

Time: preparation - 20 minutes plus resting
........ time for the batter
........ cooking - 30 minutes

serves 6

400 g (14 oz) white flour
2 eggs
15 g (1/2 oz) active dry yeast
2 tablespoons ground cinnamon
Grated rind of a lemon
5 apples
10 tablespoons sugar
Extra virgin olive oil for frying
Icing sugar

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

Prepare a batter with the flour, eggs, ground cinnamon, sugar, lemon zest, about 500 ml (16 fl oz - 2 C) water and yeast. Use a whisk to avoid lumps. Allow it to rest for about 1 hour.
Peel and slice the apples. Add them to the mixture.
Heat a good quantity of oil in a frying pan and deep fry spoonfuls of the mixture over a high flame. Drain well and dust with icing sugar.
Serve warm or cold.

Our suggestion is: Malvasia di Castelnuovo Don Bosco (sweet wine from Piedmont - Italy)
