Spaghetti with aromatic herbs

- 320 g (11 1/4oz) spaghetti
- Extra virgin olive oil
- Salt
- Red hot chilli pepper
- Onion
- Celery
- Carrots
- Garlic
- Parsley
- Rosemary
- Sage
- Marjoram
- Some fresh and ripe tomatoes

The recipe of spagheti with aromatic herbs
Chop all the aromatic herbs finely. Put them (except parsley that must be added only at the end) in a pan together with the olive oil and red hot chilli pepper. Season to taste with salt and fry
lightly for few minutes; then keep on cooking, adding some warm water now and then. Clean, wash and chop tomatoes and add to the sauce.
Cook for further 5 minutes over a fierce heat or until the sauce is well retired.
Meanwhile cook spaghetti to "al dente" stage; drain them and dress with this sauce.
Serve immediately.
