Time:
preparation: 10 minutes plus
400 g (14 oz) fresh salmon |
|
Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)
When you buy salmon, choose fillets so you can have better results.
The first step is to remove skin from the salmon and cut it into cubes. Put them in a bowl. Squeeze oranges and cover
with their juice the fish cubes. Add 2 tablespoons chives, cover the bowl and let the fish marinate for at least an hour.
While you are cooking your noodles in abundant salt water, you have to prepare the sauce. Pour the fish with all its
marinating juice into a non-stick frying pan, season to taste with salt and cook over a medium heat, stirring now and
then. It takes about 10 minutes. Your sauce must not be too retired. Cook noodles (tagliatelle) until "al dente"
stage and remove pasta from boiling water with a skimming ladle. Put the noodles into the pan, add the remaining chives,
stir and cook over a fierce heat for a minute, stirring with a wooden spoon, in order all the ingredients flavour well.
Serve immediately.
What's the right wine?
Our suggestion is: Vermentino di Sardegna (white wine from Sardinia)
