Pasta with tomato sauce is an healthy recipe according to the Mediterranean diet!
Saute the garlic and onion in the olive oil. Use a non-stick frying pan. Add the puréed tomatoes, season to taste with salt and keep on cooking only for few minutes. Add a chilli if liked.
Meanwhile cook the pasta in a large kettle of salted boiling water until al dente stage. Drain it and pour into the sauce. Add the basil cut into pieces and flavour all the ingredients on high heat stirring continuously.
Serve at once.
Note
- - You can choose the pasta shape you prefer. The best choice for an healthy recipe is whole-wheat pasta.
- - If you don't like garlic use dried chives and more onions.
- - In summer you can use raw tomatoes (about 200 g - 7 oz). Chop the tomatoes after peeling them. Saute the garlic and onion. Add the tomatoes to the pan, season to taste with salt and cook the sauce for about 10 minutes until the cooking juice is well retired. Toss the pasta with this sauce and some basil leaves.
You can also use raw tomatoes without cooking them for a tasty sauce. Peel the tomatoes, chop them and dress with the olive oil, basil, salt and pepper if you like. You can also add some raw onion, finely chopped. Prepare the sauce with the raw tomatoes while you are cooking the pasta. Drain it and pour into the tomato sauce. Stir and serve. It's fantastic!
- - To complete your meal you can eat a meat or fish fillet (100-150 g) with the accompaniment of seasonal vegetables (200 g). Use only a tablespoon of olive oil to dress them. The best thing would be to use 1 and 1/2 tablespoons of olive oil for the whole meat (pasta dish and second course).
