Authentic Italian recipes - Mediterranean pasta (Pasta salad)

Time: preparation: 15 minutes
........ cooking: 5-15 minutes (it depends
........ on the type of pasta)

400 g (14 oz) can chopped tomatoes, or 550 g
   (1 1/4 lb) fresh tomatoes, peeled, seeded
    and chopped
12 teaspoons anchovy fillets in oil, drained,
    finely chopped
8 tablespoons dried chives
4 teaspoons dried oregano
4 tablespoons minced fresh basil
375 g (13 oz) mozzarella cheese, cubed
12 tablespoons olive oil
Salt
450-500 g (16-18 oz) chilli short pasta

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

Prepare the dressing for pasta 1 hour before its cooking.
Put all the ingredients in a large bowl, stir gently, season with salt and chill for at least 1 hour, covered.
Cook pasta "al dente", drain it in the colander and run under cold water in order to stop its cooking.
Add pasta to the mixture.
Let chill at least 2 hours before serving but bring back to room temperature to serve.

What's the right wine?
Our suggestion: "Verdicchio dei Castelli di Jesi" or a white Italian wine.
