
(Pasta salad with mackerel – Our recipe)
Time:
Preparation: 25 minutes

150 g (5 1/2 oz) short pasta
2 mackerels, medium size
8 ripe but firm tomatoes
4 tablespoons dried chives
2 tablespoons dried parsley
2 teaspoons dried bay leaves
2 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
White vinegar

Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)
Steam the mackerels until tender.
If you want, you can add some white vinegar to the water. When they are cold, remove their fishbone and skin and reduce the meat into pieces.
Boil the tomatoes for a minute in order to peel them better. When they’re cold, remove the peel and seeds and dice the pulp.
Cook the pasta "al dente" according to the instructions on the package.
Drain it and stop the cooking under running cold water.
Put the pasta (well drained), mackerels, tomatoes, aromatic herbs, balsamic vinegar and olive oil in a large bowl.
Season to taste with salt and stir with delicacy.
Keep in a cool room until serving.
Note
- - It’s a tasty one-plate meal. Serve it at lunch. Complete your meal with fresh fruit.
- - You can also use fresh aromatic herbs .
