- 160 g (5 3/4 oz) short pasta
- 1 400 g (14 oz) can artichokes, sliced
- 90 g (3 1/4 oz) surimi crab sticks
- 1 40 g (1 1/2 oz)young fresh onion
- 1 tablespoon chives
- 1 tablespoon parsley
- 2 tablespoons extra virgin olive oil

Bring to the boil a large pot of salted water and cook pasta according to the instructions on the package.
Meanwhile drain the artichokes and slice the onion and fish. Put all these ingredients in a bowl and add the herbs.
Drain the short pasta and then add it in the bowl. Dress with olive oil and stir; add salt only if necessary.
Serve at room temperature.

- - This is a very simple and quick pasta salad; a tasty dish for summer. You can prepare it for a buffet too!
- - You can prepare it in advance; preserve in the fridge but remember to serve it at room temperature for the best taste.
- - To complete the meal serve, after the pasta salad, a seasonal green salad and then fresh fruit.
