Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)
In this recipe fillets aren't fried in the classical way. They are cooked in the oven. So you can eat in a light way. It's a very
low fat food!
Preheat oven to 200° C (400° F).
Meanwhile dip your fillets first into the white flour, then into the beaten egg and in the end into dry breadcrumbs.
Arrange them in an ovenproof non-stick frying pan that must have a riddled bottom preferably.
Cook them for 15-20 minutes, according to their thickness, stirring once.
Season to taste with salt and olive oil. 2 tablespoons are enough for every fillet.
What's the right wine?
Erbaluce di Caluso: a white wine from Piedmont - Italy.
