
Tasty antipasto (Italian starter) or side dish!
Prepare the oranges. Using a sharp knife cut a slice from the top and the bottom of every fruit. Place the fruit on a board, bottom down. Cut off the rind lengthways in thick strips, following the curve of the fruit. Remove all the white part that can give a bitter taste. Then slice the fruit crossways.
Chop the parsley and onions finely.
Arrange the orange slices on a deep serving plate. Sprinkle them with the chopped ingredients, olive oil, salt and pepper. Let the oranges rest for 30-60 minutes in a cold place before serving.
