grilld clams to open a meal
(Grilled clams - Traditional recipe from Marches)  


ingredients - serves 6
  • 2 kg (4 1/2 lb) clams
  • 60 g (2 oz) dry breadcrumbs
  • A bunch of fresh parsley, finely chopped
  • 2 garlic cloves, chopped
  • 6 tablespoons extra virgin olive oil
  • Salt
  • Pepper, if you like.

    preparation: 10 minutes plus the time for washing clams

Wash the clams in salt water for many times. At last rinse them well.
Meanwhile mix the garlic together with parsley, olive oil and dry breadcrumbs; season to taste with salt and pepper.
Dip the clams into this mixture and grill them until golden. It's difficult to say the necessary time: it depends on many elements. Grill them until golden.
Serve them hot with a plate to put the empty shells.
