Tortellini with ham-and-cream sauce

- 80 g (2 3/4oz) baked ham in a slice

- 1 tablespoon dried parsley
- A pinch of nutmeg

Tortellini with ham-and-cream sauce is a typical Italian recipe. It's easy-to-do and quick-to-do but very tasty.
You can prepare it for your daily menu if you want to eat Italian-way or you can choose it for a celebration menu.
There are a lot of recipes on Internet, very different from each other. This is the recipe we are used to make at our kitchen. We dedicated a post on our blog about these different recipes. If you are interested on it read our post.
To make cream-and-ham tortellini you'll need: fresh tortellini, heavy cream, baked ham, aromatic herbs (parsley and chives), nutmeg and extra virgin olive oil.
Here's the recipe!
Prepare the sauce. Chop the baked ham very finely. Put the olive oil together with aromatic herbs in a non-stick frying pan. Add the ham too!
Cook the tortellini. Cook the tortellini al dente stage, following the instructions on the package, in a plenty of boiling salt water.
The last step. A minute before draining the tortellini heat the sauce. Drain and transfer the tortellini into the pan. Flavor on medium heat, stirring with delicacy for less than a minute. At the last moment add the heavy cream and nutmeg.
Stir and serve at once.
Note
- - Serve accompanied with a bowl full of Parmesan cheese. Everyone will be able to sprinkle it on the top of his dish.
- - Generally we don't add any salt to the sauce. The filling of tortellini and baked ham are already salted and it isn't necessary to add more salt to the sauce according to our taste. But this is subjective. Our tip is: avoid using too much salt for an healthy eating.
- - A lot of people use butter instead of olive oil. We use olive oil not to increase the fat amount. It is already high.
What's the right wine ?
We prefer to drink a medium-bodied red wine such as Lambrusco of Sorbara (red wine of Emilia - Italy)
