Dip your cod fillets in the milk for about 30 minutes. Drain them and then dip into the flour.
Meanwhile heat the oil in a non-stick frying pan. Fry the fillets for about 5 minutes on every side. Put them in absorbent kitchen paper in order to remove the excess of fat. Season to taste with salt and serve immediately accompanied with lemon.
Note
- - Somebody use to fry the cod only in the butter but the dish is too heavy. You can fry your cod fillets only in the olive oil but it is wrong to call this dish: cod, miller's style.
- - You can also use frozen cod fillets after thawing them.
What's the right wine?
Our suggestion is: Bolgheri Rosato (a rosé wine from Tuscany - Italy).
