Merluzzo fresco al forno
Baked fresh cod
- 800 g (1lb and 12 1/4oz) fresh cod fillets
- 20 g (3/4oz) fresh flat-leaf parsley
- 1 garlic clove
- 1/3 glass of white wine
- 4 tablespoons extra virgin olive oil
- Half a lemon juice, filtered
- Salt
- Pepper, if you like

It's an easy and tasty dish. It's low in calories and fat.
Preheat oven to 180°C (350°). Oil a baking tin with 2 tablespoons olive oil. Arrange your cod fillets in the tin. Season to taste with salt and pepper. Dress with the remaining olive oil and wine. Bake for about 40 minutes.
Meanwhile clean and wash parsley and then chop it together with the garlic clove, peeled. After 20 minutes remove the tin from the oven, sprinkle the cod fillets with the chopped garlic and parsley. Pour over them the lemon juice and turn the cod fillets on the other side. Put the tin in the oven again and complete the cooking.
Serve the fish hot.
Note
- - You can prepare this dish with frozen cod too. Thaw it before using.
- - Accompany this dish with potato salad or with boiled vegetables.
