pizza with mozzarella cheese and rocket

  • Bunch of rocket (about 80 g - 3 oz)
  • 3 tablespoons extra virgin olive oil

Prepare the pizza dough. When the dough has risen, divide it into four pieces and, on a lightly floured surface, roll out each piece. You can obtain the shape you want: rectangular or round. The doses are enough for four 30 cm (12in) round baking sheets if you like crunchy pizza but if you prefer soft pizza use only two baking sheets.
Oil the baking sheets with 1 tablespoon olive oil. Transfer every portion of the dough to a baking sheet.
Oil the surface of every pizza with the remaining extra virgin olive oil and allow to rise about 30-40 minutes in a warm place.
Preheat oven to 220°C (425°F) and cube the mozzarella. Clean, wash and drain the rocket very well and then cut it into thin strips.
Bake the two pizzas for about 10-15 minutes, then remove them from the oven and arrange the cubed mozzarella cheese and rocket over the top. Season to taste with salt and bake again for about 5 minutes. Cooking times are indicative; everyone can adjust them to his oven.
Serve hot or warm.
We prefer to let the mozzarella cheese melt and so we add the rocket at last time just before the baking time goes to its end.
