- Pizza dough (half the doses) or 1 200-250 g (7-8 oz) pkt ready rolled pie crust
- 450 g (1 lb) fresh French beans
- 400 g (14 oz) potatoes
- 125 g (4 1/2oz) low-fat yogurt
- 400 g (14 oz) julienne vegetables (carrots, courgettes, celery)
- 80 g (3 oz) fresh young onions, finely chopped
- 1 tablespoon dried parsley
- 1 tablespoon dried chives
- 1 tablespoon all purpose flour
- 100 g (3 1/2oz) raw ham, sliced
- 3 tablespoons extra virgin olive oil

Children like very much this vegetable pie as they can't understand the presence of assorted vegetables.
Prepare the pizza dough following our instructions (but remember to half the doses) or your favourite recipe (you need 250 g - 8 1/2 oz of all purpose flour).
While the dough is leavening prepare the filling.
Steam potatoes, let them cool and peel.
Clean, wash and steam French beans.
Put the potatoes and French beans through a food mill.
Cook the julienne vegetables. Put 2 tablespoons of olive oil in a non-stick frying pan and let the onions and julienne vegetables saute on very low heat, stirring frequently. Cook the vegetables for 10-15 minutes until tender.
Mix the puréed potatoes and French beans with julienne vegetables and yogurth. Season to taste with salt and stir accurately. The filling is ready!
Preheat the oven to 200°C (400°F). Grease a 30 cm diameter baking sheet or pizza pan and sprinkle it with the flour. Roll out the pizza dough on a lightly floured surface and line the baking sheet with it. Prick with a fork the dough and spoon the filling. Level the surface and bake for about 15 minutes or until the dough is golden.
Remove the sheet from the oven, arrange immediately the slices of ham on the surface.
Serve after 5 minutes.
Note
- - You can add a couple of tablespoons of grated Parmesan to the filling and/or substitute the yogurth with butter and milk. We prefere a lighter recipe.
- - Use ready rolled pie crust if you have no time to make the dough.
- - It can be one-plate meal; serve it with a seasonal green salad and then fresh fruit. In this case it serves less people.
But you can also serve it with assorted salami and cheeses and other vegetable courses.
Another idea: cut it into little pieces. Perfect appetizers! It serves more people.
