  • 700 g (1lb and 8 3/4oz) puréed tomatoes (passata)
  • 1 270 g (9 1/2 oz) can red radicchio in oil
  • 600 g (1lb and 5 1/4oz) potatoes
  • 4 eggs
  • 250 g (8 3/4oz mozzarella cheese
  • 2 tablespoons dried chives
  • 4 tablespoons extra virgin olive oil
  • Salt

The pizza with radicchio in olive oil, potatoes and hard boiled eggs is very tasty but unfortunately full of calories as you can see by the nutrition facts.
If you decide to do it because you like the idea of using the red radicchio be careful in choosing what to eat in the remaining meals of the day. If you're careful to avoid putting on weight!
The red radicchio in olive oil is an ingredient that is available in Italian supermarkets.
The other ingredients are very common in the preparation of pizza: mozzarella, tomato sauce, eggs, potatoes, chives, good-qualityolive oil and pizza dough. You can choose to buy ready-to-bake pizza dough or make it at mome.

Anyway here's the recipe of pizza with red radicchio, potatoes and eggs!

Prepare the pizza dough. Prepare the pizza dough following your favorite recipe or our instructions. We have a page with a lot of pizza dough recipes. If you make pizza with our recipe, you'll have less fat and calories.
Once made the pizza dough cover it with a cotton towel and let it rise in a warm place away from drafts until it doubles.

Prepare the potatoes. While the dough rises peel the potatoes and cut into small pieces. Look at the photo for their size. Let them cook in a nonstick pan with two tablespoons olive oil on low heat, stirring often. When cooked, add salt, stir and turn off the burner.
Remove the radicchio from the jar and cut it into thin strips.
Cook the eggs by boiling for 8 minutes. Once cooled, peel and mash with a fork.

Prepare the pizzas in the baking sheets. When the dough has risen, divide it into four pieces and, on a lightly floured surface, roll out each piece. You can obtain the shape you want: rectangular or round. This amount of dough is enough for four 30 cm (12in) round baking sheets if you like crunchy pizza but if you prefer soft pizza use only two baking sheets.
Oil the baking sheets with 1 tablespoon olive oil. Transfer every portion of dough to a baking sheet.
If you don't want a too thin pizza let the pizzas rise for 20 minutes in a warm place.
Preheat oven to 200°C (400°F). Prepare the tomato sauce. Mix the puréed tomatoes with the remaining oil and chives. Season to taste with salt and stir accurately. Spoon the tomato sauce to within 1/2 inch (1,2 cm) of the rim. Arrange potatoes on the top. Bake the pizzas for about 15 minutes.

The last step. Meanwhile grate the mozzarella cheese.
Remove the baking sheets from the oven and sprinkle the mozzarella cheese over the top. Bake again for about 5 minutes. Cooking times are indicative, everyone can adjust them to his oven.
Sprinkle the egg on the top before serving as you can see on the photo.
Serve hot or warm.

Note

If you don't find red radicchio in oil you can prepare it steaming or grilling it 1 day ahead and then covering with olive oil enriched with parsley and chives.
