This sauce, well known all over the world, is ok for serving fried scampi or poached eggs.
Boil eggs for 10 minutes; plunging the cooked eggs into very cold water as they are cooked helps you loosen the shell. Crush yolks with a fork and cut whites into thin strips.
Meanwhile chop capers and gherkins finely.
Add mustard to egg yolks in a bowl. Season to taste with salt and pepper (if you like). Whip the sauce adding oil, in the same way for mayonnaise sauce. Then add vinegar.
When is well whipped, complete its preparation with gherkins, capers, parsley and egg whites. Stir very well and with delicacy.
Preserve in the refrigerator.
