to drink throughout the meal especially with rice & peas, pasta & chickpeas, pasta & beans, baked pasta with meat sauce, grilled meat, baked or stew poultry, seasoned cheeses
- Production area of Valpolicella DOC:
- a group of valleys spreading from the foothills of the Lessini Mountains, north of Verona
- Vine selection :
- Corvina Veronese (40 - 70%), Rondinella ( 20 - 40%), Molinara ( 5 - 25%), Rossignola and/or Negrara Trentina and/or Barbera and/or Sangiovese (0 - 15%)
- Colour:
- ruby red with maroon accents with aging
- Aroma:
- winy, agreeable, delicate, characteristic that remembers sometimes the bitter almonds
- Taste:
- bone-dry or velvety, firm, bitterish, sapid and harmonious
- Minimum alcohol content:
- 11%
