You can serve this kind of sauce with boiled meat or fish. This sauce belongs to the Middle Ages; it was a poor dressing. Many people

Clean and wash parsley; dry it and cut finely. Pour it into a mortar together with garlic, salt and a little piece of chili pepper. Beat all the
ingredients vigorously until you have an homogeneous mixture. Put it in a sauce boat and add olive oil very slowly until your sauce has the right density.
Preserve in the refrigerator.
