Cherry tomatoes are great as tidbits. I solve many different situations with them. In this case, I fill them with mozzarella, chopped anchovies and fresh chives. Then I bake them to melt the cheese. They are a true goodness but calories and fat can reserve a surprise! More details below.

- 20 cherry tomatoes
- 20 cherry mozzarellas
- 7 anchovy fillets in oil
- 1 1/2 tablespoon extra virgin olive oil
- A bunch of chives, chopped

Recipe for baked stuffed cherry tomatoes
Preparation and cooking
- - Clean and wash tomatoes.
Pat dry with absorbent kitchen paper.
Trim their top. Using a teaspoon, scoop out tomato pulp.
Salt inside and turn them upside down. They have to lose their vegetation water as much as possible.
Let them there for about 30 minutes.

... remove anchovies from the jar and cut every fillet into three pieces. Put them apart.
Drain cherry mozzarellas.
- - Preheat oven to 190°C (375°F).
- - Stuff cherry tomatoes.
Put some chives, a drop of oil and a cherry mozzarela inside.
Arrange a piece of anchovy on the top and bake for 8-10 minutes or until mozzarella melts.
Just before serving
- - Serve stuffed cherry tomatoes lukewarm or cold.
- - You can also serve these stuffed cherry tomatoes without baking them. They’re very tasty!

You can use it for plates of assorted appetizers. They go well with cold cuts and sliced smoked fish too.
They can be delicious as side-dish for grilled meat and fish or roast pot.
Also excellent in a happy hour (aperitivo time) or meal, buffet-style.
I sometimes put them together with other finger food for a dinner in front of the TV. Hence doses for two :)))
