The history of tomato in Italy makes me always think. Tomato is not native of Italy, it was born in America, yellow. Yellow tomato. It arrives in Italy and through the centuries it becomes red thanks to the crosses of our farmers. Red tomato. In Italy we call it pomodoro that is pomo (fruit) d'oro (golden). This name remembers us its origin when it was yellow. But Italian cuisine is well known all over the world for red tomatoes, right? ;))) This page is dedicated to summer recipes for fresh tomatoes. Tired of the usual tomato salad? apart from the fact that tomato salads can be dressed in dozens of different ways, tomato is a versatile vegetable that can be adapted to many solutions.
Its versatility also comes from the huge variety. There are big and small tomatoes, elongated and round, ribbed and smooth, ripe or not, red and yellow (now black too!), with many or few seeds ...
Each variety can be prepared with different ingredients and special techniques. So the dishes are really a lot!

Tomato recipes

To fill so little tomatoes is a long work but the result is gratifying ;))
Their stuffing is made with mozzarella cheese, anchovies in oil and chives.

This is not an Italian recipe but I make it willingly when in early autumn the last fruits on the plants are hopelessly green.

It is a long to do recipe but it is worth preparing them for your special guests. Cherry tomatoes are filled in two different ways: scrambled eggs with bacon and ricotta mixed with salmon.
